Zucchini Three Ways


This was the dinner I made one summer night after a trip to the farmers market and my garden. I made zucchini in a tomato sauce, zucchini and potato frittata, garlic bread and raw zucchini and summer squash salad. The salad had lemon juice, olive oil and pecorino romano cheese. Everything here showcased zucchini in very different, non-overwhelming ways.
